Za'atar Chicken Thighs with Cherry Tomatoes and Chickpeas

Ingredients

For 4 servings

  • 8 bone-in chicken thighs, skin on
  • 400g tin chickpeas, drained and rinsed
  • 300g cherry tomatoes
  • 3 tbsp za'atar
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 lemon, juiced
  • 1 tsp ground cumin
  • Salt and black pepper to season
  • Fresh flat-leaf parsley, to serve
