- 4 x 140g salmon fillets
- 3 heads little gem lettuce, halved lengthways
- 50g Parmesan, finely grated plus shavings
- 2 tbsp capers, rinsed
- 4 anchovy fillets in oil
- 3 tbsp mayonnaise
- Juice of 1 lemon
- 1 garlic clove, minced
- 2 thick slices sourdough, torn into croutons
- 2 tbsp olive oil
- Salt and freshly ground black pepper
