Baked Salmon Caesar Tray

  • 4 x 140g salmon fillets
  • 3 heads little gem lettuce, halved lengthways
  • 50g Parmesan, finely grated plus shavings
  • 2 tbsp capers, rinsed
  • 4 anchovy fillets in oil
  • 3 tbsp mayonnaise
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • 2 thick slices sourdough, torn into croutons
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper
