  • 4 large Romano peppers, halved lengthways and deseeded
  • 400g turkey mince
  • 150g cooked long-grain rice
  • 1 onion, finely diced
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 200g tin chopped tomatoes
  • 1 tbsp olive oil
  • 40g cheddar, grated
  • Salt and black pepper to season
