- 500g turkey mince
- 1 courgette, diced
- 1 aubergine, cut into 2cm cubes
- 250g cherry tomatoes
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp chilli flakes
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Greek yoghurt and flatbreads, to serve
- Fresh coriander, to serve
- Salt and black pepper to season
