Turkey Kofte Tray Bake with Roasted Vegetables

  • 500g turkey mince
  • 1 courgette, diced
  • 1 aubergine, cut into 2cm cubes
  • 250g cherry tomatoes
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp chilli flakes
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Greek yoghurt and flatbreads, to serve
  • Fresh coriander, to serve
  • Salt and black pepper to season
