Ingredients

- 600g firm tofu, pressed and cut into chunks
- 1 x 400g tin chopped tomatoes
- 1 onion, finely diced
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp tikka masala paste
- 200ml single cream
- 2 tsp garam masala
- 1 tsp ground turmeric
- 2 tbsp groundnut oil
- Large handful fresh coriander, to serve
- Salt
