  • 80g sun-dried tomatoes in oil, roughly chopped
  • 3 tbsp balsamic vinegar
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 100ml chicken stock
  • 1 tbsp olive oil
  • Large handful rocket
  • 40g parmesan, shaved
  • Salt and black pepper to season
