- 4 skinless chicken breasts, butterflied and pounded thin
- 3 tbsp plain flour
- 2 tbsp olive oil
- 1 onion, finely diced
- 3 garlic cloves, minced
- 400g tin chopped tomatoes
- 2 tbsp capers, rinsed
- 1 tsp sugar
- 1 tsp dried oregano
- Small handful fresh basil
- Salt and black pepper to season
