Ingredients

For 4 servings

  • 4 skinless chicken breasts, butterflied and pounded thin
  • 3 tbsp plain flour
  • 2 tbsp olive oil
  • 1 onion, finely diced
  • 3 garlic cloves, minced
  • 400g tin chopped tomatoes
  • 2 tbsp capers, rinsed
  • 1 tsp sugar
  • 1 tsp dried oregano
  • Small handful fresh basil
  • Salt and black pepper to season
