For 4 servings

  • 4 lamb leg steaks (about 200g each)
  • Large handful flat-leaf parsley
  • 2 tbsp capers, rinsed
  • 4 anchovy fillets
  • 1 garlic clove
  • 1 tsp Dijon mustard
  • 3 tbsp extra virgin olive oil (plus extra for the pan)
  • 1 tbsp red wine vinegar
  • 1 lemon, juiced
  • Salt and black pepper to season
  • Roasted new potatoes, to serve
