- 4 lamb leg steaks (about 200g each)
- Large handful flat-leaf parsley
- 2 tbsp capers, rinsed
- 4 anchovy fillets
- 1 garlic clove
- 1 tsp Dijon mustard
- 3 tbsp extra virgin olive oil (plus extra for the pan)
- 1 tbsp red wine vinegar
- 1 lemon, juiced
- Salt and black pepper to season
