Thai Basil Chicken

Ingredients

For 2 servings

  • 225g chicken thigh fillets, skinless and boneless, cut into bite-sized pieces
  • 1½ tbsp peanut or vegetable oil
  • 2 large garlic cloves, finely chopped
  • 1 bird's eye or Thai chilli, deseeded and finely chopped
  • 1 spring onion, cut into 4cm lengths
  • 1 large handful of Thai basil leaves (or regular basil)
  • 2 tsp oyster sauce
  • 1 tsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 2 tbsp water
