Fiery, sticky and addictively good: king prawns stir-fried with red onion, chilli and tomato in an umami-rich sauce of soy, vinegar and Worcestershire, topped with toasted cashews. A true Sri Lankan devilled classic — one pan, ten minutes.

Sri Lankan Devilled Cashew Prawns

Ingredients

For 4 servings

  • 2 tbsp coconut oil or vegetable oil
  • 80g raw cashew nuts
  • 1 large red onion, halved and sliced into half-moons
  • 4 garlic cloves, finely chopped
  • 2cm fresh ginger, finely chopped
  • 1 red chilli, slit lengthways (deseeded for less heat)
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • ¼ tsp ground turmeric
  • 5 cherry tomatoes, halved
  • 1 tbsp apple cider vinegar
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp caster sugar
  • 500g raw king prawns, peeled and deveined
  • Fine salt, to taste
  • Fresh coriander and steamed rice, to serve
