- 1 x 290g jar roasted red peppers, drained
- 50g blanched almonds, toasted
- 2 garlic cloves
- 1 tbsp red wine vinegar
- 1 tsp smoked paprika
- 4 tbsp extra-virgin olive oil
- 1 thick slice stale bread, roughly torn
- Salt and freshly ground black pepper
- Fresh flat-leaf parsley, to serve
