Prawn Fajitas with Avocado Cream

Ingredients

For 2 servings

  • Juice of 2 limes, plus lime wedges to serve
  • 1 red chilli, deseeded and finely chopped
  • 2 garlic cloves, crushed
  • Small bunch of coriander, roughly chopped
  • 225g large raw peeled prawns
  • 1 ripe avocado, stoned and flesh scooped out
  • 1 heaped tbsp soured cream, plus extra to serve
  • 1 tbsp olive oil
  • 1 red pepper, deseeded and thinly sliced
  • 4 flour tortillas
  • Handful of mixed salad leaves, to serve
  • Salt and black pepper
