- 4 large eggs
- 200g merguez sausage, sliced into rounds
- 100g feta cheese, crumbled
- 1 x 400g tin chopped tomatoes
- 1 red onion, finely diced
- 2 red peppers, deseeded and sliced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Half tsp cayenne pepper
- 2 tbsp olive oil
- Fresh coriander and flatbreads, to serve
