Shakshuka with Merguez and Feta

Ingredients

For 4 servings

  • 4 large eggs
  • 200g merguez sausage, sliced into rounds
  • 100g feta cheese, crumbled
  • 1 x 400g tin chopped tomatoes
  • 1 red onion, finely diced
  • 2 red peppers, deseeded and sliced
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Half tsp cayenne pepper
  • 2 tbsp olive oil
  • Fresh coriander and flatbreads, to serve
