Kung Pao Chicken

Ingredients

For 4 servings

  • 500g chicken thigh fillets, cut into bite-sized pieces
  • 2 tbsp peanut oil
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, finely chopped
  • 6–10 dried red chillies, cut into 2cm pieces, most seeds discarded
  • 3 spring onions, cut into 2cm pieces, white and green parts separated
  • 1½ tsp ground Sichuan peppercorns
  • 90g roasted unsalted peanuts
  • 2 tsp cornflour
  • 1 tbsp light soy sauce
  • 1½ tbsp dark soy sauce
  • 2 tbsp Chinese black vinegar
  • 1 tbsp Chinese cooking wine
  • 3 tbsp sugar
  • ½ tsp sesame oil
  • 80ml water
