Bibimbap-Style Tofu and Vegetable Pan

  • 280g firm tofu, pressed and sliced
  • 250g cooked short-grain rice
  • 2 tbsp gochujang paste
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 carrot, cut into matchsticks
  • 100g beansprouts
  • 100g baby spinach
  • 2 eggs
  • 2 tbsp vegetable oil
  • 2 tsp toasted sesame seeds
  • 2 spring onions, sliced
