Halloumi Traybake with Chickpeas & Roasted Veg

Ingredients

For 4 servings

  • 750g baby new potatoes, halved
  • 2 medium red onions, quartered and broken into pieces
  • 4 tbsp olive oil
  • 400g tin chickpeas, drained
  • 1 large red pepper, sliced into strips
  • 400g romanesco broccoli or cauliflower, cut into small florets
  • 250g mixed cherry tomatoes
  • 4 garlic cloves, peeled
  • 250g reduced-fat halloumi, thinly sliced
  • Small bunch of basil, leaves torn
  • Salt and freshly ground black pepper
