- 750g baby new potatoes, halved
- 2 medium red onions, quartered and broken into pieces
- 4 tbsp olive oil
- 400g tin chickpeas, drained
- 1 large red pepper, sliced into strips
- 400g romanesco broccoli or cauliflower, cut into small florets
- 250g mixed cherry tomatoes
- 4 garlic cloves, peeled
- 250g reduced-fat halloumi, thinly sliced
- Small bunch of basil, leaves torn
- Salt and freshly ground black pepper
