- 450g halloumi, cut into thick slabs
- 250g puy lentils, cooked according to packet instructions
- 300g cherry tomatoes
- 4 garlic cloves, unpeeled
- 3 tbsp olive oil
- Large bunch of flat-leaf parsley
- Small bunch of fresh basil
- 2 tbsp capers
- 1 tsp Dijon mustard
- Juice of 1 lemon
- 5 tbsp extra-virgin olive oil
- Salt and black pepper
