- 3 medium courgettes, thinly sliced into rounds
- 2 garlic cloves, crushed
- 4 ripe tomatoes (about 400g), roughly chopped
- 8 medium free-range eggs
- Handful of fresh dill, finely chopped
- 100g vegetarian feta, crumbled
- Salt and black pepper
