Frying Pan Chicken Piccata

Ingredients

For 3 servings

  • 450g skinless boneless chicken breasts (2 large)
  • 4 tbsp plain flour
  • 2½ tbsp parmesan, finely grated
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2½ tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 tbsp / 30g unsalted butter, cubed (for the sauce)
  • 160ml dry white wine
  • 2 tbsp fresh lemon juice
  • 3 tbsp capers in brine, drained
  • 1½ tsp flat-leaf parsley, finely chopped, plus extra to serve
