- 8 large eggs, beaten
- 150g cooking chorizo, diced
- 2 medium potatoes, peeled and thinly sliced
- 1 red pepper from a jar, drained and sliced
- 1 onion, thinly sliced
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 50g Manchego or Parmesan, finely grated
- Salt and freshly ground black pepper
- Fresh flat-leaf parsley, to serve
