  • 8 large eggs, beaten
  • 150g cooking chorizo, diced
  • 2 medium potatoes, peeled and thinly sliced
  • 1 red pepper from a jar, drained and sliced
  • 1 onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 50g Manchego or Parmesan, finely grated
  • Salt and freshly ground black pepper
  • Fresh flat-leaf parsley, to serve
