Ingredients

For 2 servings

  • 250g lean pork mince
  • 1 large aubergine, cut into cubes
  • 2 tbsp black bean sauce
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing rice wine
  • 1 tsp sesame oil
  • 1 tsp chilli oil or chilli flakes
  • 3 spring onions, sliced
  • 2 tbsp groundnut oil
  • 1 tsp cornflour mixed with 2 tbsp cold water
