- 250g lean pork mince
- 1 large aubergine, cut into cubes
- 2 tbsp black bean sauce
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp soy sauce
- 1 tbsp Shaoxing rice wine
- 1 tsp sesame oil
- 1 tsp chilli oil or chilli flakes
- 3 spring onions, sliced
- 2 tbsp groundnut oil
- 1 tsp cornflour mixed with 2 tbsp cold water
