Ingredients

  • 600g skinless chicken breast, cut into strips
  • 200g mangetout
  • 1 red pepper, thinly sliced
  • 4 tbsp smooth peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp sweet chilli sauce
  • 1 tbsp sesame oil
  • 1 tbsp lime juice
  • 100ml hot water
  • 3 garlic cloves, minced
  • 2 tbsp vegetable oil
  • Roasted peanuts and spring onions, to serve
