- 600g skinless chicken breast, cut into strips
- 200g mangetout
- 1 red pepper, thinly sliced
- 4 tbsp smooth peanut butter
- 3 tbsp soy sauce
- 2 tbsp sweet chilli sauce
- 1 tbsp sesame oil
- 1 tbsp lime juice
- 100ml hot water
- 3 garlic cloves, minced
- 2 tbsp vegetable oil
- Roasted peanuts and spring onions, to serve
