  • 8 large eggs
  • 200g asparagus, woody ends snapped off, cut into 3cm pieces
  • 150g frozen peas, defrosted
  • Small bunch of fresh mint, leaves picked and roughly chopped
  • 100g feta cheese, crumbled
  • 3 tbsp olive oil
  • 1 onion, finely sliced
  • Salt and black pepper
