Anything-Goes Vegetable Frittata

Ingredients

For 4 servings

  • 2 tbsp extra virgin olive oil
  • 100g cooked sweet potato, cut into small chunks
  • 175g cooked new potatoes (about 3), cut into small chunks
  • 100g broccoli, stem sliced and head cut into small florets
  • ½ red pepper, deseeded and chopped
  • 1 leek, cut into small chunks
  • 50g frozen peas
  • 1 red or green chilli, finely chopped (deseeded if you prefer less heat)
  • 100g feta, roughly broken
  • 6 large free-range eggs
  • Sea salt and freshly ground black pepper
