Yangzhou Fried Rice

Ingredients

For 2 servings

  • 3 cups cooked jasmine rice, cooled (ideally day-old)
  • 3 tbsp neutral oil, separated
  • 2 garlic cloves, minced
  • 50g carrot, diced small
  • 50g frozen peas
  • 30g dried shiitake mushrooms, rehydrated and finely chopped (or fresh)
  • 60ml water or chicken stock
  • ½ tsp salt, separated
  • 80g small raw prawns, peeled
  • 80g SPAM or diced ham or char siu pork
  • 2 eggs, lightly beaten
  • ¼ tsp ground white pepper
  • 1 spring onion, finely sliced
