Vietnamese Prawn Pho

  • 300g raw king prawns, peeled
  • 1 litre good-quality chicken or fish stock
  • 150g dried rice noodles, soaked
  • 2 star anise
  • 1 cinnamon stick
  • 3cm piece fresh ginger, sliced
  • 2 tbsp fish sauce
  • 1 tsp caster sugar
  • Large handful beansprouts
  • Fresh mint, coriander and Thai basil, to serve
  • 1 red chilli, sliced, lime wedges and hoisin sauce, to serve
