- 300g raw king prawns, peeled
- 1 litre good-quality chicken or fish stock
- 150g dried rice noodles, soaked
- 2 star anise
- 1 cinnamon stick
- 3cm piece fresh ginger, sliced
- 2 tbsp fish sauce
- 1 tsp caster sugar
- Large handful beansprouts
- Fresh mint, coriander and Thai basil, to serve
- 1 red chilli, sliced, lime wedges and hoisin sauce, to serve
