Ingredients
For 6 servings
- 400g basmati rice, soaked for 30 minutes and drained
- 1 cauliflower, broken into small florets
- 2 large carrots, diced
- 2 red onions, sliced
- 400ml vegetable stock
- 400ml water
- 1 tbsp biryani spice mix
- 1 tsp turmeric
- 3 tbsp ghee or vegetable oil
- Large pinch of saffron soaked in 2 tbsp warm milk
- 50g raisins
- 50g cashew nuts
- Fresh mint and coriander, to serve
