Roasted Vegetable Biryani

Ingredients

For 6 servings

  • 400g basmati rice, soaked for 30 minutes and drained
  • 1 cauliflower, broken into small florets
  • 2 large carrots, diced
  • 2 red onions, sliced
  • 400ml vegetable stock
  • 400ml water
  • 1 tbsp biryani spice mix
  • 1 tsp turmeric
  • 3 tbsp ghee or vegetable oil
  • Large pinch of saffron soaked in 2 tbsp warm milk
  • 50g raisins
  • 50g cashew nuts
  • Fresh mint and coriander, to serve
