Thai Green Curry

Ingredients

For 4 servings

  • 4–6 tbsp Thai green curry paste (or 1 batch homemade)
  • 2 large garlic cloves, minced (if using jar paste)
  • 2 tsp fresh ginger, finely grated (if using jar paste)
  • 1 tbsp lemongrass paste (if using jar paste)
  • 2 tbsp vegetable oil
  • 250ml chicken or vegetable stock, low-sodium
  • 400ml tin coconut milk, full fat
  • 1–3 tsp fish sauce, to taste
  • 1–3 tsp white sugar, to taste
  • 6 kaffir lime leaves, torn in half
  • 350g chicken thigh fillets, skinless and boneless, sliced
  • 2 small Japanese aubergines, cut into 1cm slices
  • 150g mangetout, trimmed
  • 16 Thai basil leaves
  • Juice of ½ lime
  • Steamed jasmine rice, to serve
