- 400ml coconut milk
- 300ml fish stock
- 2 lemongrass stalks, bruised
- 2 red chillies, thinly sliced
- 4 spring onions, sliced
- 2 tbsp fish sauce
- 1 tbsp lime juice
- 2 garlic cloves, minced
- 1 tsp ground ginger
- Small handful fresh coriander, to serve
