  • 400g tin black beans, drained and rinsed
  • 200g tin sweetcorn, drained
  • 150g mature Cheddar, grated
  • 2 tbsp pickled jalapeños, drained and sliced
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • 2 tbsp vegetable oil
  • Soured cream, guacamole, and fresh coriander, to serve
