  • 600g firm tofu, pressed and cubed
  • 300g baby spinach
  • 1 onion, finely diced
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 green chilli, finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 200ml coconut milk
  • 2 tbsp ghee or groundnut oil
