Ingredients

For 4 servings

  • 400g pack pork sausages
  • 300g shallots, peeled and halved (quartered if large)
  • 2 garlic cloves, sliced
  • 2 courgettes, trimmed and cut into small chunks
  • 1½ tbsp olive oil
  • 300g chestnut mushrooms, wiped clean and halved
  • 6 plum tomatoes, halved
  • 2 tbsp balsamic vinegar
  • ½ tsp Dijon mustard
  • 2 tbsp runny honey
  • Fresh basil leaves, to garnish
