Roasted Sea Bream with Fennel, Potatoes & White Wine

Ingredients

For 2 servings

  • 2 tbsp olive oil
  • 1 small fennel bulb, finely sliced
  • 2 large baking potatoes, peeled and very finely sliced
  • 1 small onion, finely sliced
  • 1 garlic clove, finely chopped
  • Salt and freshly ground black pepper
  • 100ml dry white wine
  • 2 whole sea bream (about 350g each), gutted
  • ½ lemon, zested then sliced
  • 2 sprigs each of thyme, rosemary and parsley
  • Small handful of flat-leaf parsley, finely chopped, to finish
