- 1 onion, sliced
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 4 garlic cloves, sliced
- 2 tsp smoked paprika
- 1 tsp cumin
- 1 x 400g tin of chopped tomatoes
- 4-6 eggs
- 100g feta, crumbled
- A handful of parsley and coriander, chopped
- Warm pitta or crusty bread, to serve
