Ingredients
For 4 servings
- 1 tbsp olive oil
- 1 onion, peeled and chopped
- 1½ tbsp Cajun seasoning
- 2 chicken breasts, cut into bite-sized pieces
- 75g cooking chorizo, cut into small chunks
- 2 garlic cloves, finely chopped
- ½ red, ½ green and ½ yellow pepper, deseeded and sliced
- 200g dried pasta shapes (such as rigatoni or penne)
- 400g tin chopped tomatoes
- 480ml chicken stock
- 80ml double cream
- Large handful of baby spinach
- 10 cherry tomatoes, halved
- 50g Cheddar, grated
- 2 tbsp freshly chopped flat-leaf parsley
