Ingredients
For 8 servings
- 2.5kg boneless pork belly, skin on and scored (from the thinner end)
- 1 tbsp flaky salt (plus more for the skin)
- 2 tbsp fennel seeds
- 2 tsp black peppercorns
- 6 garlic cloves, finely chopped
- Small handful each of rosemary, sage and thyme, all finely chopped
- 3 tbsp olive oil
- 1 lemon, zested
- Pinch of dried chilli flakes (optional)
- 250ml dry white wine (optional, for the gravy)
- Soft rolls and chutney, to serve
