Harissa Roasted Pepper and Couscous Tray

Ingredients

For 4 servings

  • 300g couscous
  • 3 mixed peppers, deseeded and cut into chunks
  • 250g cherry tomatoes
  • 2 red onions, cut into wedges
  • 3 tbsp harissa paste
  • 400ml hot vegetable stock
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 50g flaked almonds, toasted
  • Small bunch of fresh flat-leaf parsley, chopped
  • Salt and black pepper
