Ingredients
For 4 servings
- 300g couscous
- 3 mixed peppers, deseeded and cut into chunks
- 250g cherry tomatoes
- 2 red onions, cut into wedges
- 3 tbsp harissa paste
- 400ml hot vegetable stock
- 3 tbsp olive oil
- Juice of 1 lemon
- 50g flaked almonds, toasted
- Small bunch of fresh flat-leaf parsley, chopped
- Salt and black pepper
