- 4 firm pears (such as Comice), peeled, cored and halved
- 140g caster sugar
- 85g butter, plus extra melted butter for brushing
- 1 star anise
- 3 cardamom pods, lightly crushed
- 1 cinnamon stick
- 2 tbsp brandy
- 375g block of puff pastry, or 1 sheet of ready-rolled
- Crème fraîche or vanilla ice cream, to serve
