Ingredients

For 4 servings

  • 4 tbsp olive oil
  • ½ onion, very finely diced
  • ½ tsp salt
  • 5 garlic cloves, crushed
  • 1 tsp dried chilli flakes
  • 500g passata (or tinned plum or crushed tomatoes)
  • Black pepper
  • Parmesan rind (optional, for depth)
  • 500g gnocchi (fresh or vacuum-packed)
  • 50g parmesan, grated
  • 125g ricotta
  • 125g mozzarella ball, torn into chunks
  • Handful of fresh basil leaves
