- 4 tbsp olive oil
- ½ onion, very finely diced
- ½ tsp salt
- 5 garlic cloves, crushed
- 1 tsp dried chilli flakes
- 500g passata (or tinned plum or crushed tomatoes)
- Black pepper
- Parmesan rind (optional, for depth)
- 500g gnocchi (fresh or vacuum-packed)
- 50g parmesan, grated
- 125g ricotta
- 125g mozzarella ball, torn into chunks
- Handful of fresh basil leaves
