  • 1 large cauliflower, broken into large florets
  • 500ml whole milk
  • 40g unsalted butter
  • 40g plain flour
  • 150g mature Cheddar, grated
  • 2 tsp Dijon mustard
  • ½ tsp grated nutmeg
  • 50g fresh breadcrumbs
  • 1 tbsp olive oil
  • Salt and black pepper
