- 4 medium potatoes (about 600g), peeled and cut into 3cm chunks
- 1 medium cauliflower, broken into florets
- 1 large onion, finely sliced
- 3 garlic cloves, minced
- 2cm piece of fresh ginger, grated
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp garam masala
- 3 tbsp vegetable oil
- Salt to taste
- Fresh coriander and lemon wedges, to serve
