  • 4 medium potatoes (about 600g), peeled and cut into 3cm chunks
  • 1 medium cauliflower, broken into florets
  • 1 large onion, finely sliced
  • 3 garlic cloves, minced
  • 2cm piece of fresh ginger, grated
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 3 tbsp vegetable oil
  • Salt to taste
  • Fresh coriander and lemon wedges, to serve
