Sweetcorn Chowder

Ingredients

For 4 servings

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 bunch of spring onions, thinly sliced (reserve 2 tbsp for serving)
  • 300g potatoes, peeled and cut into 1cm cubes
  • 600ml vegetable stock
  • 340g tin sweetcorn, drained
  • 200ml whole milk
  • Small bunch of chives, finely snipped
  • Salt and freshly ground black pepper
