Saucepan Thai Green Curry

Ingredients

For 4 servings

  • 2 tbsp vegetable oil
  • 4–6 tbsp Thai green curry paste (from a jar)
  • 2 garlic cloves, minced
  • 2 tsp fresh ginger, finely grated
  • 1 tbsp lemongrass paste
  • 400ml full-fat coconut milk
  • 250ml low-salt chicken or vegetable stock
  • 1 tsp fish sauce (or soy sauce for vegetarian)
  • 1 tsp caster sugar
  • 6 kaffir lime leaves, torn
  • 350g boneless skinless chicken thighs, sliced
  • 2 small aubergines, cut into 1cm rounds
  • 150g sugar snap peas
  • Juice of ½ lime
  • Large handful of Thai basil or fresh coriander
  • Steamed jasmine rice, to serve
