Ingredients: 1 tbsp olive oil; 2 garlic cloves, finely chopped; 1 onion, finely chopped; 1 red pepper, roughly chopped; 500g beef mince; 800g tin chopped tomatoes; 400g tin red kidney beans, drained; 600ml beef stock; 250g dried elbow macaroni; 2 tsp paprika; 2 tsp ground cumin; 1½ tsp onion powder; 1 tsp dried oregano; ½ tsp cayenne pepper (adjust to taste); 1¼ tsp salt; ½ tsp black pepper; 200g Cheddar or Monterey Jack, grated; Fresh coriander, to serve (optional)

All the bold spice of chilli con carne meets the cheesy comfort of mac & cheese in a single pot, on the table in 25 minutes. Kidney beans, beef mince and macaroni all cook together in one bubbling pot.
