New Orleans Jambalaya

Ingredients

For 5 servings

  • 1 tbsp vegetable oil
  • 180g smoked bacon, chopped
  • 200g andouille or smoked sausage, sliced 0.5cm thick
  • 300g boneless skinless chicken thighs, cut into 2.5cm pieces
  • 12 large raw prawns, peeled
  • 4 garlic cloves, minced
  • 15g butter
  • 1 large onion, cut into 1.5cm pieces
  • 2 celery sticks, cut into 1.5cm pieces
  • 2 green peppers, cut into 1.5cm pieces
  • 225g long-grain white rice
  • 625ml low-sodium chicken stock
  • 200g tinned crushed tomatoes
  • 2 tbsp tomato purée
  • 4 spring onions, sliced, plus extra to serve
  • 2 tsp fresh thyme leaves (or 1 tsp dried)
  • 4 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper
  • ½ tsp black pepper
  • ½ tsp salt
