Moroccan Chickpea and Sweet Potato Tagine

Ingredients

For 4 servings

  • 2 x 400g tins chickpeas, drained and rinsed
  • 2 large sweet potatoes, peeled and cut into 3cm chunks
  • 400g tin chopped tomatoes
  • 300ml vegetable stock
  • 1 preserved lemon, rind only, finely chopped
  • 100g green olives
  • 1 large onion, diced
  • 3 garlic cloves, sliced
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 2 tbsp olive oil
  • Small bunch of fresh coriander, to serve
