Ingredients
For 4 servings
- 2 x 400g tins chickpeas, drained and rinsed
- 2 large sweet potatoes, peeled and cut into 3cm chunks
- 400g tin chopped tomatoes
- 300ml vegetable stock
- 1 preserved lemon, rind only, finely chopped
- 100g green olives
- 1 large onion, diced
- 3 garlic cloves, sliced
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 2 tbsp olive oil
- Small bunch of fresh coriander, to serve
