- 1kg waxy potatoes, peeled and very thinly sliced
- 3 leeks, trimmed and sliced into 1cm rounds
- 150g Gorgonzola, rind removed and crumbled
- 400ml double cream
- 200ml whole milk
- 2 garlic cloves, minced
- 1 tsp fresh thyme leaves
- ½ tsp grated nutmeg
- 30g Parmesan, grated
- Salt and black pepper
