  • 1kg waxy potatoes, peeled and very thinly sliced
  • 3 leeks, trimmed and sliced into 1cm rounds
  • 150g Gorgonzola, rind removed and crumbled
  • 400ml double cream
  • 200ml whole milk
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme leaves
  • ½ tsp grated nutmeg
  • 30g Parmesan, grated
  • Salt and black pepper
