  • 1.2kg onions, thinly sliced
  • 1.2 litres vegetable stock
  • 150ml dry white wine
  • 50g unsalted butter
  • 1 tsp caster sugar
  • 2 garlic cloves, minced
  • 3 sprigs of fresh thyme
  • 1 bay leaf
  • 4 thick slices of baguette
  • 150g Gruyère cheese, grated
  • Salt and black pepper
