- 1.2kg onions, thinly sliced
- 1.2 litres vegetable stock
- 150ml dry white wine
- 50g unsalted butter
- 1 tsp caster sugar
- 2 garlic cloves, minced
- 3 sprigs of fresh thyme
- 1 bay leaf
- 4 thick slices of baguette
- 150g Gruyère cheese, grated
- Salt and black pepper
