- 1 whole chicken (about 1.5kg)
- Salt and freshly ground black pepper
- 15g butter
- 1 tbsp olive oil
- 1 lemon, halved
- 2 bay leaves
- 4 fresh thyme sprigs
- 200g cooking chorizo, roughly sliced
- 700g new potatoes, halved if large
- 4 garlic cloves, bashed
- 100ml dry sherry
- 200ml hot chicken stock
- Handful of flat-leaf parsley, roughly chopped
