One-Pot Chicken with Chorizo and New Potatoes

Ingredients

For 4 servings

  • 1 whole chicken (about 1.5kg)
  • Salt and freshly ground black pepper
  • 15g butter
  • 1 tbsp olive oil
  • 1 lemon, halved
  • 2 bay leaves
  • 4 fresh thyme sprigs
  • 200g cooking chorizo, roughly sliced
  • 700g new potatoes, halved if large
  • 4 garlic cloves, bashed
  • 100ml dry sherry
  • 200ml hot chicken stock
  • Handful of flat-leaf parsley, roughly chopped
