Slow Casserole Beef Ragu

Ingredients

For 6 servings

  • 1kg beef shin or chuck, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 sticks of celery, diced
  • 4 garlic cloves, crushed
  • 2 tbsp tomato purée
  • 250ml red wine
  • 2 x 400g tins of plum tomatoes
  • 2 bay leaves and a few sprigs of thyme
  • Salt and pepper
