- 1kg beef shin or chuck, cut into chunks
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 sticks of celery, diced
- 4 garlic cloves, crushed
- 2 tbsp tomato purée
- 250ml red wine
- 2 x 400g tins of plum tomatoes
- 2 bay leaves and a few sprigs of thyme
- Salt and pepper
